Question About Sprouted Breads

I received the following question and comment about my post about sprouted bread:


I am looking forward to posts on this. I wonder if sprouted bread is sold at Rockland Bakery. My dad always buys bread there. What are the health benefits of sprouted bread as opposed to Rye bread?

Sprouted grain has far more nutrients.  Something happens to beans, grains and legumes when you sprout them; their nutritional content becomes richer.  Whole wheat bread is okay, but when sprouted, even grains like wheatberries attain far more protein, antioxidants and vitamins than the wheat alone.  Just about any grain or legume can be sprouted including rye.  Instead of eating the regular baked rye bread, you could sprout the rye grains, make a dough from it and then make very nutrient dense crackers, breads and cereals with a dehydrator.  It's ridiculous the amount of food that you could make from sprouts.  We could actually live on sprouts and never get board or go hungry.  I now understand the secret of people on raw food diets.  They don't need animal protein because they get all of their protein from nuts and sprouts!
